Melissa's recipe
Olive oil - 2 tablespoons
Onion - 1 small (chopped)
Garlic - 3 cloves (minced)
Water or chicken broth - 2 cups
Cilantro - 1/2 teaspoon
Black Beans - 1 can
Cumin - 1 teaspoon
Beef buillon cube - 1 cube
Long grain white rice - 1 cup
In a sauce pan, add olive oil on medium heat. Stir in onion and garlic until soft.
Stir in the water/broth, black beans, cumin, and buillon cube.
Bring to boil and add the rice and cover. Simmer until the rice is tender.
Stir in cilantro once finished.
